With regards to activity logging, it's a little unclear from the wording. If I do 7 census gathering in a 7 hour session, one each hour, will I upload 7 date/timestamped values for activity or will just the latest one be uploaded?

It should submit one for each hour. So if you took a census 7 times, each in a different hour, it would send in data for the 7 hours in which you took the census.
