Well, to be honest, 'till now i had not much in mind with player numbers in WoW.
To come short: I was born on EU Area 52 long time ago, had the chance to be on the last server, which opened Ahn'Qiraj (what a party it was).
Good old days. Then lost interest, played almost all other games like Aion, Diablo, Guild Wars 2, LotRO, Rift, Tera, to name a few, but came back to WoW lately.
Got bored now with the other stuff and well, WoW is still epic . Anyway.
Now, a lot of folks have obviously left EU Area 52 and transferred to other servers. Hmm, now my wife and i think about a transfer too. But where to go?
In the official forums the advice for transfers is pretty lame. Some ppl have Favs like EU Aegwynn PvP, EU Blackrock PvP or EU Blackhand PvE.
Hell, Real Pop shows indeed very huge numbers for some and especially for those servers.
But those figures are really misleading for folks like us.
So we made some Testchars there and thanks to Census, which we're runnning in WoW-boxes now on an older PC - one for Horde and one simultaneous for Alliance - we make some
snapshots each hour for Area 52 and EU Blackhand currently. And know what? Very interesting details.
Currently Census found (still counting):
EU Blackhand
Horde: 12763 Chars
Alliance: 4220 Chars
EU Area 52
Horde: 1831 Chars
Alliance: 3661 Chars |

Well, Blaxx, as it happens, I have some characters on German realms. It's a fairly long story and some parts of it are rather sad, so I won't go into further detail in public. In any case, here are my personal observations:
Nera'thor has very small horde, no info on alliance side.
Baelgun has decent sized alliance, no info on horde side.
Alleria was my first realm. It's not as big as it used to be, but it still spikes to "high" during some busier times. It's also fairly well balanced with alliance being slightly bigger and more active.
Others (this data comes from people other than me):
Dun Morogh (PvE), big alliance side
Blackmoore (PvP), big on both sides and well balanced between factions
I would dearly love more nice people on Alleria, but I do understand that you are looking for big realm. In that regard, Blackmoore might be just the place for you and your wife, expecially if you prefer horde side. The available data on most other German realms is currently pretty sketchy on WCR, so I can't say much about them.
I restricted myself to German options as you only named German realms on your post. I hope this small input is of some use to you.

That would be my playing field. I'd say the alliance side has ~70% of the population and as I usually play on that side I don't get much horde chars while scanning the horde AH twice each day. |

Blackmoore [EU] is quite crowded and sometimes takes a queue of several hundred people to go first to log in. IMHO, that place is not a good server to start. |

Thank you both for extra input I was unable to provide. Alas, it seems Blaxx has not been about lately. :/
On other news, sadly, the backlog has taken another slow turn for the worst. At best, to my knowledge, we were about 4 days, 22 hours behind. Now the distance has crept back up to almost 9 days.
Last processed file was uploaded on 2013-04-30 03:48:50.
Current server time is 2013-05-09 01:29:05
There isn't that much left of April, but there are still multiple large files to go through, a few from me, about a dozen from Padanfain and most certainly more from others. It's starting to look like April will not be finishing until tomorrow my local time at earliest. Well, at least there have not been excessively many failures. I show two on April 25th, other than those, past few days have gone by ok.
